Georgia's Paddock Shiraz
Wine
Jasper Hill Georgia's Paddock Shiraz is grown in rusty red soils in Heathcote. Planted in 1975, the vines are ungrafted, unirrigated and organically farmed.
Minimal intervention at the winery allows the wine to express its distinct regional character. The fruit is handpicked, sorted and destemmed before wild yeast fermentation.
After extended skins contact, the wine is racked and transfers to French oak barrels, a small portion new. It matures for 12 months, undergoing natural malolactic fermentation.
Once blended, the wine is given a coarse filtration and is bottled unfined.
Rich magenta, Jasper Hill Georgia's Paddock Shiraz has concentrated fruit flavours, complex spiciness and supple yet assertive tannins.
A classic Heathcote Shiraz. Cellaring potential is 10 years.
